The accused was detained after eight youngsters and one adult became sick at Stathern Lodge in the summer month.
The 76-year-old, from Ruddington in Nottinghamshire, admitted guilt to a multiple criminal counts when he was present at Leicester Crown Court on the end of the week.
Yet, he refused to admit one particular crime he was facing, which was against a nine-year-old child.

'Candy game'
Mary Prior KC, presenting evidence, outlined Ruben's offending to the legal proceedings.
She explained his targets were under-privileged children who were participating in a summer camp which he ran.
Ruben engaged in a "sweet game" with the minors, Mrs Prior said, in which he would enter the boys' rooms when they were preparing to sleep and tell them to consume candy "rapidly".
She told the court Ruben had played this game with the children "over an extended period", and minors had previously fallen ill the next day.
She explained Ruben had been able to explain this repeatedly as the children being "overstimulated by activities", until his family member had suspicions in recently.
Mrs Prior KC added: "Recently" his stepson had worries about the situation, with valid cause.
"They chose" to examine in the individual's items."
The legal counsel said items including infant oil, ointment and medical needles were located, and his family member contacted the police about his suspicions.
She said the man proceeded to play the "sweet game" with six children that night - July 26th - and they were everyone unwell the subsequent day.
"Authorities" had not arrived by that time," she continued.
The regulatory agency, the investigative body, had stated that it was reviewing law enforcement's management of the situation.
The legal representative stated the youngsters were unable to walk properly due to their sickness, so Ruben's stepson contacted the authorities again.
She said Ruben then engaged in the "candy game" in a room of five children.
